Hi, I’m Mike and I love tea.
Truth be told, my passion for the world’s most popular beverage (that isn’t water) is relatively young, and very ill-timed. You see, I lived in Beijing for 4 years and though I drank some good tea, for some reason it wasn’t until after I left that the spark for tea lit the growing flames of passion I’m now experiencing. The good news is, it’s never too late to start enjoying tea!
What about The Tea Letter?
My hope is every article I write here is something that can be enjoyed over a cup of tea! As for topics, expect a focus on Chinese and Taiwanese teas, and oolong in particular. I will also focus on the process of enjoying tea, from understanding its humble origins as a leaf on a bush through to how to best enjoy it in your cup. I’m even planning to get deeper into the chemistry of tea, such as the interaction between tea and yixing clay pots on a chemical level, the controversial and murky subject of tea’s caffeine content, what’s actually happening when tea leaves are roasted/oxidized, and more.
